Shiitake
A classic!
When cooked, the shiitake has a velvety and fleshy texture. They are full of umami thanks to the amino acid glutamate.
Its meat flavor combines well with robust lamb, peas and ginger.

Eryngii
The King Oyster.
It is a mushroom with a tender consistency, porcini-like texture of tight but flexible meat, very pleasant, just like its flavor, soft and sweet, which enhances the umami with cooking.
- Very good source of riboflavin, niacin, pantothenic acid
- A good source of protein, thiamin, vitamin B6
- Very low in saturated fat and cholesterol
- The cap and the stem have the same flavor and texture

Oyster
They have a very mild flavor, when cooked they present a much wider range of delicious flavors.
When cooked over high heat, they tend to be earthy, aromatic, a little sweet and sometimes with a touch of fennel.
To enjoy a more delicate flavor, try cooking oyster mushrooms in a mild stew, which helps to highlight a salty flavor that can be striking.

Nameko
Don’t be intimidated by its gelatinous aspect, the glossy sheen is caused by a natural layer of gelatin coating the surface. When cooked, Nameko mushrooms are firm and silky with a cashew-butterscotch aroma and a mildly fruity, nutty, and earthy flavor.
The gelatinous covering on the caps acts as a natural thickener and is often used in soups, stews, risotto, and sauces..

Shimeji
Shimeji mushrooms have an almond aroma and a strong and bitter taste when fresh. When cooked, the texture is crunchy with a buttery flavor and shellfish nuts.
Shimeji mushrooms are best suited for cooked applications, such as sautéing, braising, stewing and roasting.
Shimeji mushrooms can be incorporated into soups, bisques, stews, omelets, pasta dishes, stir-fries, rice dishes and sauces.

Enoki
Golden Enoki mushrooms are also known as Enokitake, Velvet Foot, Golden Needle, Lily.
Golden Enoki mushrooms, when cooked, they have semi-crunchy consistency with a mild, sweet, and earthy flavor. Enoki mushrooms are best suited for cooked applications such as simmering, blanching, stir-frying and sautéing.
- Rich in enoki linoleic acid as well as enoki chitosan
- Source of conjugated linoleic acid (CLA)
- Full of thiamin, niacin, potassium, riboflavin, pantothenic acid, calcium, copper, iron, and selenium
